CALABACINES CON TOMATE/ PUMPKINS WITH TOMATO

Ingredients:
4 zucchini
1 onion
2 tablespoons of grated cheese
½ kg of tomatoes
2 cloves of garlic
Flour
Parsley
Pepper
Oil
Sea salt
Preparation:
Wash the Zucchini, peel them and cut into pieces to be able to work more comfortably with them. put them in a pan with a good drizzle of oil and start to fry them, this is the base of this delicious dish.
When they are fried, sprinkle them, place the zucchini on absorbent paper and then arrange them in a baking dish.
Remove a little of the oil from the zucchini, fry the peeled and sliced garlic. We will also add to this background the onion, peeled and chopped as finely as possible.
Let the onion and garlic poach, season to taste. When they are almost ready, put the tomatoes peeled and cut into pieces. Make a kind of sauce. Put half a teaspoon of sugar and a little more sea salt.
This tomato sauce will take about 20 minutes to be perfect. Let the tomatoes cook little by little. When they are ready, pass the sauce through the mixer and strain so that the seeds are eliminated and that a much more elegant finish is left.
Put the tomato sauce on top of the zucchini and top with a little grated cheese to taste. Gratin these zucchini at 180º for about 15 minutes, until the cheese has melted. We will have ready a vegetarian dish based on vegetables that the whole family will love, you just have to try it and enjoy it.
